L/C Water

1 lemon
1 cucumber
ice
water
splenda if desired
lemon sliced into rounds, thin
cucumber cut into long strips, thin
add ice & splenda
mix
enjoy


can be made ahead...
for single serving, 12 oz ; 1/2 lemon & cucumber
re~use veggies 2~4 times... till flavor is gone.
delish!

Homemade Pizza


[serves: 4+]

1 1/4 warm water
1 packet yeast
2~3 tablespoons of oil
2~3 teaspoons salt & sugar
3+ cups flour
add water & yeast together...
let sit for 5 mins
then add sugar... then salt.
then add oil... and start mixing.
(i use a kitchen aid stand mixer... but you can use a bowl/spoon.)
Start adding flour... slowly.
Mix until it comes together... and add enough flour ... so the dough makes a ball and stops sticking to the sides. (don't add 2 much flour!)
kneed for 5~8 minutes depending on what looks good.
Separate the dough ball into 2.
set in bowls 2x's theie size, sprayed with some oil.
cover and let rise... about 45 mins.
a 2nd rise is not necessary... but i like to do 2 rises.
(punch down, let rise again)
when finished rising, ...
flour your counter... and form into a ball.
roll with a rolling pin to desired size.
if it keeps shrinking, let sit for 5 mins and roll again.
top w/ what ever you like.
this also make great bread sticks.
bake @ 350~75 for 10~20 minutes. :)

Enchilada's [quick]


[serves 4~6]

12 [or so] Tortillas
2 small cans or 1 large can of Enchilada Sauce
1 bag of Mexican Cheese [2 cups]
1 pound of Chicken, Ground Beef or Shredded Beef

optional: lettuce, tomatoes & sour cream

Cook Meat of your choice.
Add 1c of Mexican cheese & 3/4 c Enchilada Sauce.
Mix together
Spoon onto Tortillas [in the middle]
Roll & Layer into 9x13 pan [or any pan]
Top with Leftover Sauce and Cheese
Bake 375 for 30 minutes
Serve with optional Veggies and/or Mexican Rice.

Pot Roast


[serves 6] [photo taken before slow cooked]

3~4 pound pot roast
1/2 pound of baby carrots
1 med onion (diced)
4 med potatoes (sliced)
1 packet onion soup mix
2 cups water

coat pot roast lightly with flour.
sear the pot roast in a large pan over med-high heat w/ 2 tbsp oil until sides are browned.

take onion, carrots, potaotes, onion soup mix & water,...combine.
add to slow cooker.
place seared roast on top.
slow cook 'all day' on low or for 5 hours on high.

serve with: (choose 1)
rice
bread
polenta
or even mashed potatoes.

serve with Salad and Dessert to 'stretch the meal'.
